Each lot is tasted and reviewed for quality, seasonality, and fit with our menu before we commit to buying. We look for clean structure, transparent origin character, and the kind of freshness that can hold up beautifully after roasting.

Test roast

Small trial batches set the profile

We roast in test batches first, then cup side by side to evaluate sweetness, balance, acidity, and body. Those early notes help us tune charge temperature, airflow, and development time until the coffee lands where it should.

Rest and pack

Resting, packing, and label checks

After roasting, beans rest long enough to stabilize, then move into packaging designed to protect aroma and freshness during transit. Before anything ships, we verify roast date, grind options, and labels so the order matches the lot.
